Feng Huang Dan Cong (凤凰单枞) - is an oolong from Guangdong. It's one of the most unique Chinese teas. Unlike most other teas, it is not farmed, but rather gathered in the wild. In fact, that's what its name suggests: Lonely/Independent Trees from Phoenix Mountains. I am aware, that it is more commonly known as Phoenix oolong, but that's not exactly a correct translation. I also understand, that "Lonely Trees" has some romantic fleur to it, but it actually indicates, that those trees grow in the wild as opposed to those lined up together side-by-side on a farm.

This tea has a very mild taste of flowers and spices, but the main beauty is in its aroma. It is always very well-pronounced, yet soft and calm. Like a good niche perfume: you can feel it distinctly, yet it's not overpowering.

There is no "one" taste of Dan Cong teas. Since the tea grows in a wild, it is different depending on where exactly it was harvested from, what time of year it was and other factors. Every year it is slightly different, even when buying from the same farmer. Yet, you will always distinguish Dan Cong from other teas.

Some people also talk about its effect on your mind. Some even go as far as to call it hallucinogenic. I admit, that it does wake you up, but it is not as strong as some people say. It is covered in this mystery for one reason: people in Guangdong love their tea very strong and it does change your perception. If you were to make it Guangdong-style, you will feel immense bitterness, that would go away in a minute and once it is gone, you will feel a firework of sweetness and floral notes aftertaste, the feeling which is going to last for a significant amount of time. There is nothing hallucinogenic in it, it is just how the taste works.
