I have to be honest with you - I can not describe this tea objectively. Aged or fermented Taiwanese oolong - are my favourite teas. Every time, when I find good traditional oolong - I place an order. They are all very similar, with slight nuances, but comparing those nuances is very interesting. For example, Li Shan - is more reserved, it doesn't have as much floral notes, but it is still very bright and attention-grabbing. Like a respected, well mannered man, wearing expensive suit - he doesn't talk much, but everybody pays attention to him. Don Ding on the other hand is more soft, smooth, slightly oily. It is probably the most delicate amongst others. Aged Alishan on the other hand is bright and fresh. Sure, years have calmed it's taste, made it more round, but you can still feel that bright energy in it. As most aged oolongs, it also has some caramel, tobaco, deep and complex notes, that I like so much.
